Just like Xero has, have more than the default email template.
e.g a quote has a "Deposit" email template where it asked them for a deposit, or a "Full" email template where it has different information asking for full payment prior to commencing work.
Same for PO's invoices etc...

I agree with Nick surely most companies have a requirement for more than one email default message as more than one person is sending out purchase orders etc.

Hi, we also have run into this problem. We have multiple locations and different people purchasing. Only having one default email address and references is a pain. Vote for this to be upgraded and allow us the flexibility that is relatively obvious.
